Zoës at Home with Chef Antonio: Mediterranean Marinades

When your favorite dinner starts to taste a little drab, a rich, tasty marinade can be just the trick to add a vibrant burst of flavor back into your meal. Chef Antonio’s flavorful marinades work well for a variety of meals and occasions, whether you’re grilling out with friends or cooking for a quiet night in with your family.

 

Mediterranean Wine & Herb

Perfect for lamb or steak, this marinade combines fresh herbs, garlic and onion with subtle heat from chili peppers to deliver layers of flavors that are balanced by the acidity of the wine. Making chicken or pork? Substitute the red wine for a dry white wine to kick up the dish.

Whisk together the following ingredients:

  • 2 tbsp. Zoës Kitchen Spice of Life
  • 1 1/2 cup red wine for red meat or dry white wine for chicken or pork
  • 1/2 cup extra-virgin olive oil
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp. chopped fresh thyme
  • 1 tsp. paprika
  • 1/4 cup finely chopped red onion
  • 1 clove minced garlic
  • 1 of your favorite spicy chili pepper (split in half and discard the seeds)

Coat your protein with the marinade, refrigerate and let the flavors soak in for at least two hours. For a more flavorful, tender meat, let it marinate for up to 12 hours.

Once you’re done marinating, grill, pan-sear or roast your dish to the perfect temperature. Complete your meal by pairing your protein with side items from one of our Fresh Takes Tubs, like our marinated slaw or grilled potato salad.

 

Honey Citrus

Citrus flavors are typical in Mediterranean dishes. This marinade brings together vibrant lemon and orange flavors to make light protein pop! Gentle herb notes from the rosemary balanced with the sweetness of the honey pairs nicely with the garlic and subtle heat from the chili flakes. This marinade is fantastic on chicken, pork and seafood.

Whisk together the following ingredients:

  • 1 1/2 tbsp. Zoës Kitchen Spice of Life
  • 1/2 cup olive oil
  • 2 tablespoons honey
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 2 cloves minced garlic
  • 2 sprigs finely chopped rosemary
  • 1/8 tsp. red chili flakes
  • Sea salt to taste

Coat your protein with the marinade, refrigerate and let the flavors soak in for two to 12 hours. Once you’re done marinating, grill, pan-sear or roast your dish to the perfect temperature. Pair your protein with one of our delicious salads, such as our Quinoa Salad or Greek Salad.

 

Bold Balsamic

Use this marinade to amp up your veggies or bring depth to your lamb or steak dish. The rich flavors of balsamic vinegar and tomatoes develops this marinade while the acidity of the dijon mustard balances it out and helps tenderize the dish to create a mouth-watering experience.

Whisk together the following ingredients:

  • 1 1/2 tbsp. Zoës Kitchen Spice of Life
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup water
  • 2 tablespoons tomato paste
  • 1 1/2 tbsp. dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp. dried oregano
  • 1/2 tsp. fresh chopped basil
  • Sea salt and freshly ground black pepper to taste

Coat your veggies or protein with the marinade, refrigerate and let the flavors soak in for two to 12 hours. Once you’re done marinating, grill, pan-sear or roast your dish to the perfect temperature. Serve with our classic or harissa red pepper hummus with pita or cucumbers for dipping.
