Mediterranean Marinades With Chef Antonio

MEDITERRANEAN WINE & HERB – Zoës Marinade

For the perfect red meat marinade – such as lamb or steak – this recipe combines fresh herbs, garlic and onion with subtle heat from chili peppers to deliver layers of flavors that are balanced by the acidity of the wine.

Making chicken or pork? Substitute the red wine for a dry white wine to kick up the dish.

Whisk and emulsify the following ingredients:

  • 2 tbsp. Zoës Kitchen Spice of Life
  • 1 1/2 cup dry white wine (or red wine for red meat)
  • 1/2 cup extra-virgin olive oil
  • 1 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp. chopped fresh thyme
  • 1 tsp. paprika
  • 1/4 cup finely chopped red onion
  • 1 clove minced garlic
  • 1 of your favorite spicy chili pepper, split in half, discard seeds

Coat your protein with the marinade and let the flavors bloom for a minimum of 2 hours up to 12. (The longer the refrigeration, the more developed and tenderized your protein will be!)

Grill, pan-sear or roast your dish to the perfect temperature.

HONEY CITRUS -Zoës Marinade

Citrus flavors are typical in Mediterranean dishes. This marinade brings together vibrant lemon and orange flavors to make light protein pop! Gentle herb notes from the rosemary balanced with the sweetness of the honey (earth’s natural sweetener) pairs nicely with the garlic and subtle heat from the chili flakes.

This marinade is fantastic on chicken, pork and seafood.

Whisk and emulsify the following ingredients:

  • 1 1/2 tbsp. Zoës Kitchen Spice of Life
  • 1/2 cup olive oil
  • 2 tablespoons honey
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 2 cloves minced garlic
  • 2 sprigs finely chopped rosemary
  • 1/8 tsp. red chili flakes
  • Sea salt to taste

Coat your protein with the marinade and let the flavors bloom for a minimum of 2 hours up to 12. (The longer the refrigeration, the more developed and tenderized your protein will be!)

Grill, pan-sear or roast your dish to the perfect temperature.

BOLD BALSAMIC -Zoës Marinade

Looking for something bold? Use this marinade to amp up your veggies or bring depth to your lamb or steak dish. The rich flavors of balsamic vinegar and tomatoes develops this marinade while the acidity of the dijon mustard balances it out and helps tenderize the dish to create a mouth-watering experience.

Whisk and emulsify the following ingredients:

  • 1 1/2 tbsp. Zoës Kitchen Spice of Life
  • 1/4 cup balsamic vinegar
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup water
  • 2 tablespoons tomato paste
  • 1 1/2 tbsp. dijon mustard
  • 2 cloves garlic, minced
  • 1/2 tsp. dried oregano
  • 1/2 tsp. fresh chopped basil
  • Sea salt and freshly ground black pepper to taste

Coat your veggies or protein with the marinade and let the flavors bloom for a minimum of 2 hours up to 12. (The longer the refrigeration – the more developed and tenderized your protein will be!)

Grill, pan-sear or roast your dish to the perfect temperature.
