Zoës at Home with Chef Antonio: Cauliflower Salad with Roasted Butternut Squash

Cauliflower Salad with Roasted Butternut Squash

The colorful, crisp, fall-inspired Cauliflower Salad with Roasted Butternut Squash is a healthy, yet easy, recipe to whip up for lunch or add your favorite grilled protein to make it the perfect dinner solution.

Servings: 4

Total time: 30 minutes

Ingredients Needed:

  • 1 quart of Zoës Kitchen cauliflower rice
  • ½ pint of Zoës Kitchen lemon vinaigrette (or substitute for another dressing)
  • 1 butternut squash
  • 1 lb. of arugula
  • .25 lb. of pistachios (optional)
  • ½ tsp of salt
  • ¼ tsp of black pepper
  • Extra-virgin olive oil


Roasting Butternut Squash

  • Heat oven to 350 degrees
  • Slice both ends of butternut squash
  • Peel squash with vegetable peeler
  • Slice squash in half lengthwise, then remove seeds with a spoon
  • Cut squash into ½ inch pieces
  • In a mixing bowl, add squash, salt and pepper with extra-virgin olive oil
  • On a cookie tray, place parchment paper and spread squash across it
  • Place in oven and bake for 15-20 minutes until golden brown


  • In a mixing bowl, add arugula and as much Zoës Kitchen lemon vinaigrette as you like
  • Place on plate
  • In a separate bowl, add Zoës Kitchen cauliflower rice with roasted squash and mix, then add to top of arugula
