Lamb Kafta and Braised White Beans Stew
Ingredients Needed:
- 1 quart of Zoës Kitchen braised white beans
- 16 Zoës Kitchen lamb kafta meatballs
- 1 cup of fresh diced tomatoes
- ¼ cup of fresh chopped cilantro
- 1 TBSP of chopped garlic
- ½ cup fresh diced red onion
- 1 TBSP of extra-virgin olive oil
Directions:
- Heat up skillet
- Add extra virgin-olive oil into skillet, then add chopped garlic
- Sautee garlic till golden brown, then add onions
- Once onions are slightly translucent, add in beans, cilantro and tomatoes
- Once beans are slightly bubbling, add in Zoës Kitchen lamb kafta meatballs
- Cook until meatballs are warm inside
Spicy Harissa Toasted Pita
Ingredients needed:
- ½ pint of Zoës Kitchen harissa sauce
- 1 TBSP of parmesan cheese
- 1 TBSP of crumbled feta cheese
- 1 tsp of chopped parsley
- 4 slices of pita bread
Directions:
- Preheat oven to 350 degrees
- Take pita bread and spread Zoës Kitchen harissa sauce evenly across
- Sprinkle cheese of choice or both on top of bread
- Sprinkle chopped parsley on top
- Place harissa pita on parchment paper in oven and bake for 5-8 minutes or until golden brown on edges
