Zoës at Home with Chef Antonio – Marinated Feta

Whether you’re hosting a party or need to bring a dish to a holiday gathering, these marinated feta recipes are easy to make and go great with toasted bruschetta bread and a glass of wine. Keep a few extra jars of this yummy goodness in your fridge throughout the holiday season so that you’ll have a delicious appetizer to serve within minutes should any friends or family unexpectedly stop by.

Total Time: 30 minutes

1. Harissa and Roasted Red Pepper Marinated Feta

Ingredients

  • 3 oz. Zoës Kitchen harissa sauce
  • 4-5 oz. diced feta
  • Roasted red peppers
  • 3-4 oz. extra virgin olive oil

Directions

  1. Add diced feta to a jar, leaving some space for the rest of the ingredients.
  2. Add Zoës Kitchen harissa sauce and sliced roasted red peppers. Top with extra virgin olive oil.
  3. Refrigerate for two to three days. For best flavor results, shake the jar upside down at least once a day.
  4. Remove from refrigerator one hour before serving.

2. Roasted Lemon, Calabrian Pepper and Bay Leaf Marinated Feta

Ingredients

  • 4-5 oz. diced feta
  • 4 roasted lemon wells
  • 2-3 Calabrian peppers (whole or chopped)
  • 3-4 bay leaves
  • 3-4 oz. extra virgin olive oil

Directions

  1. Add diced feta to a jar, leaving some space for the rest of the ingredients.
  2. Add roasted lemon, Calabrian peppers (whole or chopped) and bay leaves. Top with extra virgin olive oil.

3. Salsa Verde and Kalamata Olive Marinated Feta

Ingredients

  • 3 oz. Zoës Kitchen Italian Salsa Verde
  • 4-5 oz. diced feta
  • 8-10 Kalamata olives
  • 3-4 oz. extra virgin olive oil

Directions

  1. Add diced feta to a jar, leaving some space for the rest of the ingredients.
  2. Add the Kalamata olives and Italian Salsa Verde.
  3. Refrigerate for two to three days. For best flavor results, shake the jar upside down at least once a day.

4. Roasted Garlic and Parsley Marinated Feta

Ingredients

  • Zoës Kitchen Spice of Life
  • 4-5 oz. diced feta
  • 3 oz. roasted garlic
  • ¼ cup rough chopped parsley
  • 3-4 oz. extra virgin olive oil

Directions

  1. Add diced feta to a jar, leaving some space for the rest of the ingredients.
  2. Add Spice of Life, roasted garlic and chopped parsley.
  3. Refrigerate for two to three days. For best flavor results, shake the jar upside down at least once a day.
  4. Remove from refrigerator one hour before serving.
