Easy Dessert Hacks that Make Living Mediterranean – So Sweet!

Living Mediterranean is more than sticking to a diet of lean proteins, fresh vegetables and getting plenty of exercise. It means occasionally drinking that glass of wine, eating that piece of cake and indulging every now and again. It is truly the Mediterranean way!

At Zoës Kitchen, we believe in just that – living life to the fullest and that means the occasional treat or “cheat day”. Our menu is made up of a variety of items from our fan-favorite Chicken Kabobs to our crisp, fresh salads. But some things we are sure to not leave out are our desserts. While you are always encouraged to enjoy our delicious desserts when you dine with us, we also want to encourage you to think of Zoës when you are dining at home or are in charge of bringing dessert to your next gathering. We have come up with three easy twists on enjoying our YaYa’s Chocolate Cake, Zesty Lemon Cookies and Chocolate Chip Cookies at home with just a few extra ingredients you can easily find at your local grocery store.

Zesty Lemon Cookie and Raspberry Dessert

Serves 4

Ingredients:

  • 2 Zoës Kitchen Zesty Lemon Cookies
  • 2 lemons
  • 1 small package of raspberries
  • Whipped cream
  • OPTIONAL: Fresh mint

Directions:

  • Crumble the two cookies evenly among four small dessert bowls
  • Juice the lemons (be sure to remove any seeds) and pour the juice evenly over the crumbled cookies
  • Sprinkle the raspberries into each of the four bowls
  • Top with whipped cream
  • OPTIONAL: Garnish with mint leaves

Chocolate Chip Cookie Ice Cream Sandwich

Serves 1

Ingredients:

  • 2 Zoës Kitchen Chocolate Chip Cookies
  • 1 Pint of Vanilla Ice Cream; softened (feel free to use any favorite flavor)

Directions:

  • Add a scoop of ice cream to one of the cookies
  • Use a fork to spread the ice cream into an even layer
  • Place the second chocolate chip cookie on top
  • Place in freezer for 20 minutes then serve
  • Repeat this step for as many ice cream sandwiches as desired

YaYa’s Chocolate Cake with Toppings

Serves 1

Ingredients:

  • Zoës Kitchen YaYa’s Homemade Chocolate Cake
  • 1 package of raspberries or strawberries
  • 1 dark chocolate bar broken into small pieces

Directions:

  • Transfer your slice of YaYa’s Homemade Chocolate Cake to a serving dish
  • Top with your fruit of choice
  • Sprinkle the chocolate pieces on top of the cake
  • Repeat if more servings are needed
